The Andes split into THREE CORDILLERAS in southern Colombia, and the valleys between them held separate societies and separate kitchens. This is where most Colombians live: Antioquia, the Eje Cafetero (Caldas, Quindío, Risaralda), Cundinamarca and Bogotá, Boyacá, Santander and Norte de Santander, Tolima, Huila, and the Andean parts of Cauca, Nariño and Valle.
