⚠ A WARNING ROW. Brazil has five official regions and 26 states plus the Federal District, and the food differs more between them than between many European countries. NORTH — Amazon, seven states, cassava and river fish. NORTHEAST — nine states, the sugar coast, the sertão and the strongest African-descended foodways. CENTRAL-WEST — Cerrado and Pantanal, cattle and native fruits. SOUTHEAST — the cities, coffee, dairy and the largest immigrant populations. SOUTH — pampa, ranching, mate, and German, Italian, Polish and Ukrainian settlement. ⚠ Feijoada, churrasco, pão de queijo and brigadeiro are four dishes from three regions and are not the cuisine.
