Specialised

PAPELÓN CON LIMÓN — unrefined cane sugar dissolved in water with lime, cold, the national soft drink and a cheap one. CHICHA CRIOLLA — thick, sweet, rice-and-milk based, cinnamon on top, sold from carts; ⚠ NOT the fermented maize chicha of the Andes, and a different thing again from CHICHA ANDINA. MALTA, the sweet dark unfermented malt drink, often mixed with condensed milk. BATIDOS and MERENGADAS of tropical fruit. GUARAPO of cane or piña. CHOCOLATE and the coffee vocabulary. COCADA on the coast. And the alcoholic: RON — Venezuela has a denomination of origin for its rum and an ageing tradition — plus CARATO, PONCHE CREMA at Christmas, and the aguardiente of the Andes. Recorded as cultural knowledge, not promoted.
