Uruguay is small, flat and almost entirely grassland, and its food varies less by region than most countries in this corpus — which is itself worth stating rather than inventing nineteen regional cuisines. What does differ: MONTEVIDEO, holding roughly a third of the population, with the markets, the immigrant kitchens and the restaurant trade; the INTERIOR / campaña, with cattle, the estancia and the asado; the LITORAL on the Uruguay river, with citrus at Salto and Paysandú; the ATLANTIC COAST of Rocha and Maldonado, with fishing and summer tourism; and the BRAZILIAN BORDER at Rivera, Artigas and Cerro Largo, which is bilingual and eats accordingly.
