Three very different waters. The WEST COAST on the Skagerrak and Kattegat is salt and Atlantic: oysters, langoustine, mussels, crab, lobster from the first Monday of October, mackerel. The BALTIC proper is brackish, and its herring is the small strömming rather than the Atlantic sill. The GULF OF BOTHNIA is fresher still — whitefish, perch, pike, salmon and the surströmming fishery. The archipelagos of Stockholm, Åboland and Bohuslän each have their own island food.
