Scotland has 32 COUNCIL AREAS, which are modern and administrative, and a separate set of HISTORIC COUNTIES AND SHIRES — Aberdeenshire, Angus, Argyll, Ayrshire, Banffshire, Caithness, Fife, Inverness-shire, Moray, Perthshire, Ross and Cromarty, Sutherland, Roxburghshire and the rest — which are what the food traditions actually refer to. ⚠ AND THREE LANGUAGES, NOT ONE: SCOTTISH GAELIC, a Goidelic Celtic language of the Highlands and Hebrides; SCOTS, a Germanic language or variety of the Lowlands, Borders and North East, with Doric, Lallans and Shetlandic among its forms; and ENGLISH. ⚠ GAELIC AND SCOTS ARE NOT THE SAME THING and neither is "Scottish food" as a whole.
