⚠ AN ENGLISH-SPEAKING COUNTRY WHOSE FOOD VOCABULARY IS FRENCH. Saint Lucia changed hands between France and Britain fourteen times, and what survived is KWÉYÒL — Saint Lucian Creole French, a first language for a large share of the population and the language in which most food is actually named. The national dish is GREEN FIG AND SALTFISH: green banana (called FIG here, never "banana") boiled and served with salt cod stewed with onion, pepper and cucumber. Plus BOUYON, the thick provision soup; ACCRA; breadfruit roasted whole on a fire; cocoa tea; and the BOUYON and the Friday night JUMP-UP at Gros Islet and the FISH FRY at Anse La Raye. ⚠ TEN DISTRICTS, and the Pitons and the drive-in volcano are at Soufrière.
