Beef from a national herd substantially larger than the human population: the ASADITO on a spit or grill, the Sunday and roadside institution; chorizo; and the Chaco ranching that supplies much of it. RIVER FISH from the Paraguay and Paraná are the other protein: SURUBÍ, dorado, pacú, boga, mandi’i and armado, in pira caldo, chupín and grilled — and the closed season during the spawning run is observed as a real seasonal constraint.
