POWYS, CEREDIGION, CARMARTHENSHIRE and PEMBROKESHIRE: upland sheep country, the Cambrian mountains, the Teifi and Tywi valleys, and the Cardigan Bay coast. Dairy above all โ Carmarthenshire and Ceredigion are the heart of Welsh milk, butter and farmhouse cheese, and CAERPHILLY was largely made here rather than in Caerphilly by the twentieth century; PEMBROKESHIRE EARLY POTATOES, protected and dug in May from the coastal fields; sea trout and salmon on the Teifi, historically netted from coracles; and Carmarthen ham, air-dried and salt-cured.
