Icelandic Fish Foodways

Specialised

Cod above all, with haddock, saithe, redfish, ling, wolffish and halibut; herring, whose boom made Siglufjรถrรฐur briefly one of the busiest ports in the North Atlantic and whose collapse in the late 1960s emptied it; Arctic char and salmon from the rivers and lakes; capelin; and cold-water shrimp and langoustine. Fishing is not heritage here โ€” it is the industry the country was built on, and the Cod Wars with Britain were fought over it.
