Sheep on the dikes and the kwelder salt marsh, where the grazing is salty and the lamb tastes of it — the same practice as on the German and Danish Wadden coast. Sheep keep the dike turf tight, which is flood defence as much as farming, and salt-marsh lamb is now a protected regional product in several of these places.
