⚠ "SECO" MEANS DRY AND THE DISH IS A BRAISE. A seco is meat stewed with onion, tomato, pepper, cumin, cilantro and a liquid that is characteristic and variable — CHICHA, beer, naranjilla juice or panela — served with rice and usually maduro and avocado. SECO DE CHIVO (goat) is the best known and is associated with the southern coast and Loja; also seco de pollo, de carne, de gallina, de chancho. ⚠ OTHER LATIN AMERICAN "SECOS" — the Peruvian seco de cordero above all — are related dishes and are not merged with this one.
