The OTAVALO of Imbabura are among the most economically successful Indigenous peoples in the Americas, with a textile trade that has carried Otavaleños and their food to every continent. Locally: the Saturday market at Otavalo, the FRITADA and the carnes coloradas of Cotacachi, the HELADOS DE PAILA of Ibarra — fruit sorbet beaten by hand in a copper pan set on straw and ice — the arrope de mora, the nogadas, and the CHICHA DE JORA drunk at INTI RAYMI in June. ⚠ THEIR DIASPORA FOODWAYS ARE PART OF THIS, not a footnote to it.
