The CIBAO valley — the agricultural heart, Santiago, and the most conservative Spanish dialect in the country; rice, tobacco, cacao and plantain. SANTO DOMINGO and the south-east — the city, the oldest European settlement in the Americas, and the sugar bateyes worked largely by Haitian and Haitian-descended labour. SAMANÁ — settled in the 1820s by free African Americans from Philadelphia and New York, still partly English-speaking and Protestant, with coconut in everything and its own distinct kitchen. The SOUTH-WEST — dry, goat country, and the Haitian border. ⚠ THE BORDER IS A FOOD REGION and a place of documented anti-Haitian violence, including the 1937 Parsley Massacre; that is recorded.
