STOOFVLEES / CARBONNADE FLAMANDE: beef stewed long in dark Belgian beer with onions, a slice of mustard-spread bread to thicken it, and something sweet — brown sugar, speculoos or sirop de Liège — served with fries. WATERZOOI from GHENT: originally a FISH dish of the Scheldt and Lys, now far more often chicken, in a broth enriched with egg yolk and cream with root vegetables; ⚠ the fish original and the chicken version are both real and neither is a corruption of the other. Also konijn met pruimen, paling in ’t groen, and hutsepot.
