Argentina holds the largest Jewish community in Latin America, Ashkenazi and Sephardi both, centred on Buenos Aires — Once and Villa Crespo — and with a distinctive rural chapter: the JEWISH AGRICULTURAL COLONIES of ENTRE RÍOS, Santa Fe and La Pampa founded from 1889 under Baron Hirsch, whose settlers became the "JEWISH GAUCHOS", combining a Yiddish kitchen with asado, mate and the pampas. Knishes, varenikes, pastrón, and Sephardi boyos and burekas. ⚠ Also the 1992 embassy and 1994 AMIA bombings, which are part of this community’s history.
