⚠ THE MOST IMPORTANT SOCIAL RITUAL IN THE COUNTRY, AND IT IS BARELY TWO CENTURIES OLD — which is worth saying, because it is often presented as ancient. Chinese GUNPOWDER green tea arrived in quantity in the nineteenth century, by several documented routes including British trade redirected during the Crimean War, and was absorbed so completely that it is now the national drink. The method: the leaf rinsed, then brewed strong, spearmint packed into the pot, a great deal of sugar in a cone or loaf broken into it, and the glass filled from a height to aerate it and raise the foam, tasted and returned to the pot until it is right. Served in small glasses, three rounds traditionally, the first strong and each successive one sweeter. Variations: absinthe wormwood (chiba) in winter, sage, verbena, or no mint at all in the Sahara. ⚠ THE POURER IS USUALLY THE HOST OR THE ELDEST MAN and the pouring is performance; refusing tea is a real refusal. Coffee is a separate, more urban and French-inflected culture — nous-nous, half coffee half milk — and the café is its own institution.
