The three northern provinces, inside the French state: Lapurdi, Nafarroa Beherea and Zuberoa. โš  NOT part of Spain, and administratively part of the department of Pyrรฉnรฉes-Atlantiques rather than a jurisdiction of their own. Butter and duck fat sit alongside olive oil, the pastry tradition is French as well as Basque, and Espelette pepper and Bayonne ham are its own.
