Baltic herring lightly salted — not enough to preserve it, which is the point — and left to ferment through the summer, then tinned, where fermentation continues and swells the can. A High Coast and Norrland tradition with a documented history from at least the 16th century, opened traditionally outdoors and eaten on tunnbröd with almond potatoes, onion and sour cream. Premiere day is the third Thursday of August. ⚠ NOT A STUNT. It is regional food with a real history, treated here as such and not as a spectacle. ⚠ SAFETY: the fermentation is a controlled salt-brine process, and the swollen can is a normal feature of it, not spoilage — but home attempts without the correct salt concentration are genuinely dangerous.
