Olancho, El Paraíso and GRACIAS A DIOS — the largest, emptiest and least governed part of the country. OLANCHO is cattle: the national beef and dairy heartland, with carne asada, chorizo, cuajada and a strong ranching culture, plus maize, beans and coffee. ⚠ LA MOSQUITIA IN GRACIAS A DIOS IS A DIFFERENT COUNTRY: rainforest, lagoon and river, reached by boat and plane, with no road. Its people are MISKITU, TAWAHKA, PECH and GARIFUNA. The food is cassava, plantain, rice, coconut, river and lagoon fish, shrimp, game and WABUL, the mashed plantain-and-coconut-milk drink. ⚠ THE MISKITU LOBSTER-DIVING ECONOMY of the Caribbean shelf is documented as causing widespread decompression injury and is recorded here as a labour and health fact, not as colour.
