The baleada is a thick, soft FLOUR tortilla — not maize — folded once over refried red beans, crumbled QUESILLO and MANTEQUILLA CREMA, the thin soured cream. That is the BALEADA SENCILLA, and it is breakfast, supper and street food. The named additions: scrambled EGG, avocado, chorizo, carne asada, pollo, chicharrón, plátano; the BALEADA ESPECIAL with egg and avocado; the BALEADA SÚPER ESPECIAL with meat. ⚠ THE NORTH COAST IS WHERE IT IS MOST STRONGLY ATTESTED and where several origin stories are told — none of them documented, and this system assigns no origin to a named person or stall. ⚠ FLOUR TORTILLAS ARE A NORTHERN CENTRAL AMERICAN AND NORTHERN MEXICAN THING, and the baleada belongs to that wheat belt rather than to the maize one; it is NOT a pupusa, a quesadilla, a gordita or a taco, and the comparison graph records structural similarity without inferring ancestry. It is also the single most portable Honduran food and the diaspora’s calling card.
