COOK-UP RICE โ€” rice, peas (black-eye, pigeon, red), coconut milk, thyme, pepper and whatever meat the house has, all in one pot, a dish built to use what is there and traditionally eaten on Saturdays or at month-end. METEMGEE (metem, metagee) โ€” the GROUND PROVISIONS, which is the Guyanese term for the starchy roots and green plantain: cassava, eddo, yam, sweet potato, plantain, boiled down in coconut milk with salt fish or salt beef and finished with DUCKANOO or flour dumplings. โš  "GROUND PROVISION" IS ITSELF A FOODWAYS TERM WORTH RECORDING: it names a category that only makes sense in a Caribbean plantation food economy.
