The Humboldt current brings cold water and a very large fishery. TUNA — Ecuador is a major world processor — plus corvina, dorado, picudo, albacora, robalo and the small fish of the artisanal fleet at Santa Rosa, Puerto López, Anconcito and Manta. MANGROVE species are separate and important: CONCHA PRIETA gathered by hand from the mud by concheros, cangrejo rojo from the Guayas estuary and the crab festivals around it, and the shrimp. Dishes: cazuela de mariscos, arroz marinero, sopa marinera, viche, encocado, ceviche.
