Its food: the CORNISH PASTY, protected, with beef, potato, swede and onion, crimped on the side and carried down the mine; saffron cake, from a spice trade that reached this coast early; hevva cake; stargazy pie at Mousehole; PILCHARDS, salted and pressed and exported to Italy for centuries; crab and lobster; and Cornish clotted cream. Mining emigration carried the pasty to Michigan, Mexico, Australia and South Africa.
