Colombia is among the largest producers and by far the largest consumer per head of PANELA โ€” whole cane sugar, boiled down in open pans at a TRAPICHE and set in blocks. โš  IT IS A PEASANT INDUSTRY, not an industrial one: tens of thousands of small trapiches, chiefly in Santander, Boyacรก, Cundinamarca and Antioquia, and it is among the largest rural employers in the country. From it: AGUAPANELA, hot or cold with lime, drunk with cheese dropped in, and given to the sick and to children as the default household drink; the sweetening of coffee, chocolate, guarapo and every dessert; and the arequipe. Separately, industrial CANE SUGAR is grown on the flat Cauca valley at a very different scale.
