The semi-arid interior of the Northeast, the only biome found exclusively in Brazil, and a kitchen shaped by drought: CARNE DE SOL and carne seca, salted and sun-dried; goat and sheep rather than cattle where the land is hardest; buchada; cassava and maize; queijo coalho grilled on a stick; UMBU, the caatinga fruit that stores water in its roots; licuri palm; and the memory of the great droughts and the migrations they forced.
