Beans as the winter centre of the plate: black Tolosa beans with cabbage, chorizo, belly and pickled guindillas; red Gernika beans; white alubias from Álava and Navarre; and the long slow pot they all need. ⚠ These are American beans, on Basque tables since the sixteenth century.
