JUJUY, SALTA, TUCUMÁN, CATAMARCA, LA RIOJA and SANTIAGO DEL ESTERO — the ANDEAN northwest, and the part of Argentina with the deepest agricultural history, continuous with Bolivia and the Inca road. Maize in many landraces, potatoes, quinoa, beans, squash, ají; llama in the puna; goat; charqui; EMPANADAS baked in a clay horno, LOCRO, HUMITA in the husk, TAMALES, picante de pollo; and the QUEBRADA DE HUMAHUACA, a UNESCO cultural landscape. ⚠ THIS FOOD IS ANDEAN AND SHARED WITH BOLIVIA, and the border is not a culinary one.
