Method

For the biscuits:

  1. Preheat the oven to 425ยฐ

  2. Spray a cookie sheet with a non-stick cooking spray.

  3. In a mixing bowl combine the flour, sugar, and salt.

  4. Work in the butter quickly, until it is incorporated in the flour.

  5. Stir in the buttermilk until soft dough forms.

  6. Lightly flour a work surface, then place your dough on the flour and roll out until 1 inch thick.

  7. Using a biscuit cutter, cut out your biscuits and place on the pan.

  8. Place in the oven and bake for 15 - 20 minutes until golden brown.

For the chicken:

  1. Spray your airfryer basket with a non-stick cooking spray.

  2. Cut off any excess fat on the chicken, and pat dry.

  3. In a shallow dish add the slightly beaten eggs.

  4. In a separate shallow dish, combine the flour, kosher salt, black pepper, and smoked paprika.

  5. In another shallow dish, add the seasoned bread crumbs and lemon zest.

  6. Dip the chicken in the flour mixture first and coat well, then in the eggs, then press into bread crumbs, making sure to coat the chicken well.

  7. Repeat until all of your chicken is coated.

  8. Place the coated chicken in the airfryer basket, and spray each chicken piece with olive oil or cooking spray.

  9. Return your airfryer basket to the airfryer base and set your airfryer to 375ยฐ for 10 minutes.

  10. Flip your chicken and spray with the non-stick spray and fry for 5 more minutes.

For the butter:

  1. In a small bowl, add the butter, honey, and your favorite hot sauce.

  2. Mix until smooth.

To assemble:

  1. Cut the biscuits open, and slather both sides with the honey butter.

  2. Add a piece or two of chicken, some pickles and serve!

  3. Enjoy!
