The most important secular day in the Swedish year, kept on the Friday between 19 and 25 June: the maypole raised and danced around, and a table of matjessill with sour cream and chives, the FIRST NEW POTATOES with dill, gravlax, Västerbottensost pie, eggs, knäckebröd, snaps with songs, and STRAWBERRIES WITH CREAM. Everything on it is at its seasonal peak in that one week, which is why the menu does not change.
