The Ebro lowlands around Tudela: irrigated market gardening of extraordinary depth — white asparagus, piquillo and lodosa peppers, artichokes, borage, cardoon, lettuce hearts — plus lamb, olive oil and wine. ⚠ This is Mediterranean farming country and it is NOT Basque-speaking; calling its food Basque would be a straightforward error.
