Milk, butter, cream, sour cream and the cultured milks — kulturmelk, skyr-type products, and the old tjukkmjølk and kefir-like farm cultures. Rømme, the thick sour cream, is a structural ingredient rather than a garnish: rømmegrøt, sour cream porridge with butter, sugar and cinnamon, is the festival food of the inland valleys and is served with spekemat.
