The vin de casă tradition: family vines, an autumn pressing that is a social event, fermentation in the beci, wine drawn from the barrel for guests as a matter of obligation, and the năşia and cumătrie hospitality in which refusing it is not really available. Much of this wine never enters commerce at all.
