Diaspora

Roughly a fifth of the population emigrated between 1870 and 1914, driven by cold, volcanic eruption and poverty — overwhelmingly to MANITOBA, where the New Iceland settlement at Gimli was founded in 1875 and where Íslendingadagurinn is still held, and to North Dakota, Saskatchewan and Washington State. The surviving foods are vínarterta — the layered prune torte, which is now better preserved in Manitoba than in Iceland — rúllupylsa, kleinur, skyr and pönnukökur.
