Specialised
Flour and fat cooked from white through blond and brown to dark chocolate. As the roux darkens the starch breaks down: flavour climbs and thickening power falls, which is why a dark roux gumbo is thin and tastes of itself. Cajun practice runs darker than Creole, and often uses oil or lard rather than butter.
