Dark roux, stock, the trinity, and then chicken and andouille, or seafood, or game. Usually no tomato. Thickened by roux, sometimes finished with filé. Served over rice. One of two gumbos in this dataset, and gumbo is not an exclusively Cajun dish.
Atlas — where and when
What is recorded
Cajun and Creole gumbo are recorded as two dishes. Cajun gumbo typically runs a darker roux and omits tomato; Creole gumbo more often uses tomato, butter, seafood and okra or filé. Household and parish variation is wide enough that these are tendencies, not rules — and gumbo is not exclusively Cajun.documented
