Rusyn foodways in the Zakarpattia region of Ukraine โ€” the largest concentration of Rusyn speakers anywhere. Maize and potatoes on the lowland, sheep dairy on the polonyny above, wine and fruit on the southern slopes, mushrooms and berries from the beech forest. โš  NOT EVERY RESIDENT OF ZAKARPATTIA IS RUSYN: the region is also Ukrainian, Hungarian, Romanian, Roma, Slovak and German, and its food is all of theirs.
