The everyday cooking of the ordinary household, codified as a category in the 19th and 20th centuries and served in lunch restaurants: pea soup and pancakes on Thursday, pyttipanna, kalops, dillkött, raggmunk, stekt strömming, kroppkakor, blodpudding with lingonberries, and köttbullar. The dagens lunch, a hot meal with bread, salad, milk and coffee at a fixed price, is the institution that kept it alive.
