The two AUTONOMOUS REGIONS of the North and South Caribbean Coast cover a very large share of the national territory with a small share of the population, were never effectively Spanish — the MOSQUITO COAST was a British protectorate and a Miskito kingdom — and were only incorporated in 1894. The people: MISKITU, MAYANGNA, RAMA, ULWA, GARIFUNA, and CREOLE communities speaking NICARAGUA CREOLE ENGLISH. The food: RONDÓN (rundown) — fish, seafood, cassava, plantain, breadfruit and dumplings in coconut milk, cooked down for hours; RICE AND BEANS in coconut milk, not gallo pinto; PATI, the turnover; coconut bread; PANBON/plunkin; WABUL, the mashed plantain and coconut-milk drink; seafood, turtle historically, and river fish. Plus BLUEFIELDS, Pearl Lagoon, Puerto Cabezas and the CORN ISLANDS. ⚠ FILING THIS UNDER "NICARAGUAN CUISINE" WITHOUT SAYING SO WOULD ERASE IT.
