⚠ THE HONDURAN TAMAL FAMILY IS SEVERAL DISHES, NOT ONE. MONTUCA (also called tamal de elote or chuchito in places) is made from FRESH young maize — elote — ground rather than from dry nixtamalised masa, with pork or chicken, sweet pepper and sometimes raisin, wrapped in the green maize leaf itself: sweetish, soft, and a different product from a masa tamal. NACATAMAL is the large Christmas tamal of masa with lard and achiote, meat, rice, potato, olive and prune in banana leaf — ⚠ SHARED WITH NICARAGUA and recorded as shared, with Honduran versions running smaller and often including rice. TICUCOS in the Lenca west are bean-filled maize tamalitos. TAMALITOS DE ELOTE and the sweet tamal de maíz dulce. Wrapping, grind, leaf and season all differ, and the comparison with the Nicaraguan nacatamal and the Guatemalan chuchito is recorded as comparison, not identity.
