The Arctic gives preservation for free for much of the year, and the traditional system uses all of it: NATURAL FREEZING and frozen storage, including eating meat and fish frozen raw as quaq; AIR-DRYING in the summer wind โ€” fish, seal and whale meat; a stone cache or cellar; light salting and smoking, both largely post-contact introductions; and controlled AGEING. โš  WARMING WINTERS AND THINNING SEA ICE ARE CHANGING THIS: unstable ice shortens the hunting and travel season and makes traditional outdoor storage less reliable, which is a documented and current food-security issue rather than a distant one.
