Roast meat — beef with Yorkshire pudding and horseradish, lamb with mint sauce, pork with crackling and apple, chicken — with roast potatoes done in fat, gravy from the tin, stuffing, and vegetables. Traditionally cooked after church, and in the terraced towns genuinely sent to the BAKER’S OVEN to cook while the family was out. The gravy is not optional and its quantity is argued about. Now as much a PUB institution as a domestic one.
