⚠ A WARNING ROW. Ecuador divides into four regions that are genuinely different food systems. The COSTA — the Pacific lowland — eats plantain, rice, seafood, peanut and cassava. The SIERRA — the inter-Andean corridor between two volcanic cordilleras — eats potatoes, maize, pork, cuy, dairy and soup. The ORIENTE — the Amazon east of the Andes — eats yuca, plantain, river fish, palm fruits and forest foods. The GALÁPAGOS, 900 km offshore, eats what the biosecurity rules and the supply ships allow. ⚠ 24 PROVINCES, and the food does not stop at their borders: a province is an address, not a cuisine.
