Bessarabian Bulgarian Foodways

Community

Bulgarian communities settled in the southern steppe in the same early 19th-century colonisation as the Gagauz, concentrated around Taraclia and in the Ukrainian Budjak at Bolhrad. Peppers, tomatoes and aubergine, sheep and cow dairy, banitsa-type pastries, and a Bulgarian Orthodox calendar. โš  NOT EVERY SOUTHERN MOLDOVAN DISH IS BULGARIAN.
