Island
The granite island in the Baltic, 135 km east of the rest of the country and closer to Sweden and Poland — which is why its food is its own. SMOKED HERRING above all, from the round-chimneyed røgerier that are the island’s signature building, eaten as "Sol over Gudhjem" with raw egg yolk, radish and chives on rye. Also: Bornholm’s own dialect, fig trees and mulberries in the mild climate, rapeseed and rye, dairy, and since the 2000s a deliberate regional food movement with a food academy, distillery, chocolatier and mills.
