Aboriginal and Torres Strait Islander peoples have eaten from this land for at least 65,000 years — the oldest continuous food culture known — and are recorded in this corpus as ROOTS in their own right, not as a chapter of this row. What THIS row describes is the settler and immigrant cuisine of the last two and a bit centuries: British at its base, transformed after 1945 by Greek, Italian, Lebanese, Turkish, Yugoslav, Maltese and Dutch migration, then from the 1970s by Vietnamese, Chinese, Cambodian, Lao and Thai arrivals, and since by Indian, Nepali, Sudanese, Afghan and Filipino communities. The result is genuinely one of the world’s more plural everyday cuisines. The staples: lamb and beef, wheat, dairy, seafood, stone fruit and citrus, wine, and an enormous coffee culture. ⚠ AND ONE CORRECTION THE SPECIFICATION ASKED FOR: there is no such thing as Australian maple. No maple-syrup industry exists here and no entity for one is created.
