Faroese Fishing Foodways

Specialised

Fish is the economy: cod, haddock, saithe, ling, tusk, halibut, redfish, herring, mackerel and blue whiting, plus farmed salmon, which is now the largest export by value. Klaksvík and the fjord villages are the fishing towns. Fish eaten fresh, dried, ræst, salted and — a very Faroese detail — the drying shed hung with fish and lamb together.
