The inter-Andean corridor between the eastern and western cordilleras — Carchi, Imbabura, Pichincha, Cotopaxi, Tungurahua, Bolívar, Chimborazo, Cañar, Azuay and Loja — at 2,000 to 3,000 m, a temperate agricultural valley floor between volcanoes. POTATOES in scores of varieties; MAIZE eaten as mote, tostado, choclo, chulpi and mote pillo; the Andean grains and tubers — quinoa, CHOCHO (tarwi lupin), melloco, oca, mashua; beans; dairy and fresh cheese; PORK and CUY; and soup at the centre of every meal. Also the MARKET — Otavalo, Saquisilí, Ambato, Riobamba — as the institution that organises the food week.
