The MONTUBIOS are the mixed-descent farming people of the coastal interior — Guayas, Los Ríos, Manabí, El Oro — recognised as a distinct people in the 2008 constitution. Their food is the cooking of the coastal hacienda and smallholding: cattle, maize, rice, plantain, cassava, the wood fire and the clay oven; seco de gallina criolla; caldo de gallina; tonga; bollo; greñoso; the horse and the rodeo montubio; and an agricultural calendar rather than a restaurant one.
