Danish Small-Island Foodways

Island

Denmark has over four hundred named islands and around seventy are inhabited. Samsø — potatoes, and the first new potatoes of the year, a genuine national event; Læsø, with sea-salt works boiling brine as it was done in the Middle Ages, and langoustine; Fanø and Rømø on the Wadden Sea; Anholt; Ærø; Langeland. Each has its own dialect, its own crop and, usually, its own festival.
